Remove QTY from cart?

My client makes one-off jewellery pieces.

I've turned off the QTY so that it doesn't show on the product page, but it still shows in the shopping cart. How can I turn it off there so that shoppers can't buy more than 1 (the unique piece)?

Alternatively, can I set QTY to be 1?

Unfortunatly the cart itself cannot be moddified in this way.
