Product Meta Tags won't override Global Settings

When adding products, I uncheck the options and type in my own Title, Description and Keywords, but it does not override what is in the Global Template. When published the pages show the Global Template information in the header. Not what I have specifically for each product. :(

I am not using details pages, but was filling in the meta stuff for them,
and have never realised I had to fill in Category Properties Section instead for the main category page, not the detailed category page.

So I have answered my own question and given myself a million things to do tonight!
