Be great to have a Pre-order function with the ability to just take details and/or a set deposit.

why not just do it with a normal product?
I cant see the benefit in this.
Put pre-order in the description of the product... I dont think any other way would work with the payment gateways unless you manually charged the remainder later - which may not be possible depending on the gateway.
